Dialing in Espresso: A Step-by-Step Guide

Helping you brew better shots, one tweak at a time.

Whether you’re behind a café bar or fine-tuning your home espresso setup, getting that perfect espresso shot is a journey filled with observation and thoughtful adjustments.

At The Coffee Collect, we believe coffee is both an art and a science. And dialing in espresso is where those two worlds collide.

Let’s walk through it step-by-step so you can approach each shot with confidence and clarity…

What Does “Dialing In Espresso” Mean?

Dialing in is the process of adjusting your espresso variables—grind size, dose, yield, and time—to create a shot that tastes balanced, sweet, and satisfying.

In simple terms: it’s tasting, tweaking, and repeating until it tastes just right.

A detailed view of espresso being brewed into a glass and cup with an espresso machine.

Step 1: Start with a Baseline Espresso Recipe

Start with a classic espresso recipe:

    • Dose: 18g (amount of ground coffee in the portafilter)
    • Yield: 36g (amount of espresso in your cup)
    • Time: 25–30 seconds (from the first drip to the last)

This gives you a 1:2 ratio—perfect for dialing in.

Pro Tip: Use a scale and timer. Consistency is everything.

Step 2: Check Your Grind Size

Grind size is one of your most powerful tools when dialing in espresso.

    • Too fast? Your grind is too coarse (under 20 seconds).
    • Too slow? Your grind is too fine (over 35 seconds).

Make small changes and purge your grinder after each adjustment to clear out old grounds.

i.e. Purge your grinder means to run a small amount of coffee through the grinder to clear out old grounds before grinding a new dose. This ensures that the coffee coming out is freshly ground at the current grind setting.

Because grind size is one of the most powerful tools when it comes to pulling the perfect shot of espresso, buying a quality coffee grinder is one of the best investments you can make as a barista. Any experienced barista will confirm this. If you don’t have the best grinder, here are three top-rated grinders to get you started:

    Step 3: Taste and Adjust

Here’s what to look for when tasting your espresso:

    • Sour / Under-extracted: Too coarse or too short
    • Bitter / Over-extracted: Too fine or too long
    • Balanced / Sweet: You nailed it!

Adjust grind size or yield one step at a time. Be sure to take notes—every coffee behaves differently.

    Step 4: Rinse and Repeat

    As you continue dialing in:

    • Purge the group head
    • Keep your portafilter clean
    • Change only one variable at a time
    • Let the coffee rest (especially if it’s freshly roasted)

Dialing in is all about patience. But trust us—this is where the real magic happens.

    Bonus Barista Tips

    • Experiment with another coffee-loving friend!
    • Always use fresh, high-quality beans
    • Weigh every dose and yield
    • Taste with curiosity—what do you notice?
    • Don’t be afraid to experiment!

Want to make your dialing-in process smoother? Here are some links to tools we love:

    • Precision Coffee Scale – Accurate dose and yield
    • WDT Tool – Even ground distribution
    • Espresso Timer – Some scales include this feature
    • Tamper – Consistent puck = consistent shot (make sure to get the right size according to your espresso machine)

    Savor the Journey

Dialing in espresso is a practice that requires technique and experimentation. One that invites you to slow down, observe closely, and grow in skill.

Best Non-Toxic (Plastic Free!) Espresso Machines | 2025

If you’re a coffee lover who prioritizes health, sustainability, and quality, finding a truly non-toxic, plastic-free espresso machine can be a challenge. Many machines on the market contain plastic components that can leach harmful chemicals into your brew, especially when exposed to high temperatures. In this roundup, we’ve researched and curated the best non-toxic espresso machines of 2025 that are completely free from plastic in the water path, ensuring a safer and purer coffee experience.

    Why Choose a Non-Toxic, Plastic-Free Espresso Machine?

Many conventional espresso machines contain plastic parts that come into direct contact with hot water, which can lead to chemical leaching over time. Common concerns include:

    • BPA & BPS Exposure: These endocrine-disrupting chemicals are found in many plastics and can seep into your coffee. Long-term exposure has been linked to hormone imbalances, metabolic disorders, and increased risks of certain cancers.
    • Microplastic Contamination: Heating plastic components can lead to the release of microplastics into your drink, which may accumulate in the body and contribute to inflammation and oxidative stress.
    • Taste Impurities: Plastic components can alter the taste of your espresso.
    • Durability & Sustainability: Metal and glass parts last longer, reduce waste, and are more environmentally friendly than plastic, making them the healthier choice for both you and the planet.

  • The History of Espresso: Invention to Icon

The History of Espresso: Invention to Icon

The History of Espresso: Invention to Icon

From the lively cafés of Italy to modern specialty coffee shops around the world, espresso has shaped the way we experience coffee. But how did this concentrated shot of caffeine rise to such iconic status? Its history is filled with innovation, passion, and a constant push for the perfect brew. Let’s take a journey through the origins of espresso and uncover how it became the heart of modern coffee culture.

The Birth of Espresso: Late 19th to Early 20th Century

Italy has long been at the forefront of coffee culture, and espresso was born out of a desire for efficiency without compromising flavor. In the late 19th century, traditional brewing methods were slow, making it difficult for cafés to serve customers quickly. This demand for speed led to groundbreaking innovation—because let’s be honest, who likes waiting too long for their coffee?

1884: Angelo Moriondo’s First Espresso Machine

The first known patent for an espresso machine was granted in 1884 to Angelo Moriondo of Turin, Italy. His steam-powered machine was designed to brew coffee faster than traditional methods. While Moriondo’s invention never saw mass production, it planted the seed for what would become the espresso revolution.

graphic of angelo moriondo's espresso machine

1901: Luigi Bezzera and the Birth of Modern Espresso

Fast forward a few years, and along comes Luigi Bezzera, a Milanese engineer with a need for speed. He took Moriondo’s concept and gave it a serious upgrade. His design forced hot water through coffee grounds under pressure, resulting in a concentrated, bold shot of coffee—what we now recognize as espresso. Unfortunately, Bezzera’s genius in engineering didn’t extend to marketing, so his invention needed a little help reaching the masses…

1903-1905: Desiderio Pavoni Brings Espresso to the Masses

Enter Desiderio Pavoni, a businessman with an eye for opportunity. He purchased Bezzera’s patents and turned the espresso machine into a commercial success. In 1905, he founded La Pavoni, producing machines that soon became staples in Italian cafés. The espresso culture we know and love today was officially brewing.

The Evolution of Espresso: Mid-20th Century Innovations

As espresso gained popularity, so did the demand for a smoother, less bitter shot. The early machines were revolutionary but still had their flaws. The next wave of innovation would take espresso from good to great.

1938: Achille Gaggia and the Birth of Crema

Enter Achille Gaggia, a man on a mission to elevate espresso. In 1938, he introduced a lever-operated machine that used high pressure (instead of steam) to extract coffee. This breakthrough marked a turning point in the history of espresso, producing a richer, smoother shot with a golden layer of crema on top. That velvety crema wasn’t just a pretty touch—it became the signature of a well-pulled espresso and a defining feature of modern espresso brewing.

1961: The Rise of Pump-Driven Espresso Machines

Just when espresso couldn’t get any better, along came the pump-driven espresso machine. In 1961, Faema changed the game with the E61 model, which used an electric pump to ensure consistent water pressure. This advancement made espresso brewing more reliable, more efficient, and ultimately, more delicious. It set the standard for modern espresso machines, paving the way for coffee perfection.

The History of Espresso: From Italian Tradition to Global Icon

By the mid-20th century, espresso had taken over Italy—and it wasn’t stopping there. Italian immigrants carried their love for espresso across the world, introducing this small but mighty shot to new audiences. Soon, it wasn’t just an Italian tradition; it was a global sensation.

    1980s-1990s: The Specialty Coffee Movement

As coffee culture evolved, so did espresso’s role in it. The 1980s and 1990s saw the rise of specialty coffee, with a focus on high-quality beans and better brewing techniques. Espresso became the backbone of trendy drinks like lattes, cappuccinos, and macchiatos. Big-name coffeehouse chains—yes, looking at you, Starbucks—helped bring espresso to the mainstream, turning it into a daily ritual for millions.

The Third Wave Coffee Movement and Espresso Innovation

Just when it seemed espresso had reached its peak, the third wave coffee movement came along to refine it even further. Today, baristas use cutting-edge technology, pressure profiling, and ethically sourced beans to craft the perfect shot. Espresso is no longer just a drink—it’s an art form, a science, and a worldwide passion.

    The Rise of Home Espresso

While espresso was once the domain of cafés and baristas, the last couple of decades have seen a major shift—espresso has moved into the home. The rise of home espresso machines has given coffee lovers the ability to pull their own shots, experiment with latte art, and perfect their brewing skills from the comfort of their kitchens. From entry-level pod machines to high-end, fully manual espresso setups, coffee enthusiasts now have endless options for crafting café-quality espresso at home. Brands like Breville, De’Longhi, and La Marzocco have fueled this trend, making high-quality espresso more accessible than ever. So, what about you? How to Make Affogato at Home: A Simple Dessert Coffee Recipe

How to Make Affogato at Home: A Simple Dessert Coffee Recipe

Affogato, meaning “drowned” in Italian, is a delightful piece of Italy’s culinary heritage. Thought to have originated in northern Italy, affogato elegantly captures the country’s love for coffee and gelato. The dessert embodies the Italian philosophy of “dolce far niente,” or the sweetness of doing nothing—encouraging you to pause and savor life’s little luxuries.

Traditionally served as an after-meal treat, affogato is a testament to simplicity. The hot espresso poured over cold gelato creates a harmonious blend of bold and creamy flavors, a sensory experience that Italians have cherished for decades. Over time, this iconic treat has gained global fame, finding its way into coffee shops and homes worldwide.

Today, whether enjoyed as a dessert or a luxurious coffee break, affogato remains a symbol of indulgence and the perfect fusion of two beloved Italian staples. This simple treat is perfect for impressing guests or enjoying a luxurious moment at home. Here’s how to craft the perfect affogato in your own kitchen:

Close-up of an ice cream parfait in a glass with coffee being poured over it, creating a delectable dessert moment.

    What You Need:

    – Vanilla Ice Cream or Gelato: Traditional affogato uses vanilla gelato, but high-quality vanilla ice cream works wonderfully. Brands like Häagen-Dazs and Talenti are excellent choices.

    – Espresso: Freshly brewed espresso is ideal. If you don’t have an espresso machine, strong brewed coffee can serve as a substitute.

    – Espresso Machine: Investing in a quality espresso machine that extracts balanced and flavorful espresso can elevate your coffee experience and enable you to make professional-level coffees, like affogato. Check out our post for top-rated home espresso machine options here.

    Instructions:
    1. Prepare the Espresso: Brew a fresh shot of espresso using your espresso machine. The standard size for a shot of espresso is 30 ml (1 ounce). If using strong brewed coffee, ensure it’s hot and robust.
    2. Scoop the Gelato or Ice Cream: Place one or two scoops of vanilla ice cream or gelato into a serving glass or bowl. The ratio is flexible; traditionally, a classic affogato is made with two cups of gelato to one shot of espresso.
    3. Combine: Pour the hot espresso directly over the ice cream. The heat will slightly melt the ice cream, creating a creamy coffee delight.
    4. Optional Enhancements: For an adult twist, consider adding a splash of liqueur such as Amaretto or Frangelico. Toppings like shaved chocolate, crushed nuts, or a drizzle of caramel can also add texture and flavor.

    Extra Tips:
    • Serve Immediately: Affogato is best enjoyed fresh to savor the contrast between hot espresso and cold ice cream.
    • Experiment with Flavors: While vanilla is traditional, feel free to experiment with other gelato or ice cream flavors like chocolate or hazelnut to suit your taste.
    • Elevate your Presentation: Invest in traditional Affogato serving mugs and stirring spoons.

    • No built-in grinder (requires additional purchase).
    • Manual steaming may have a learning curve for some users.

    Keep in Mind

When selecting the right espresso machine, consider your specific needs:

    • Space Constraints: The De’Longhi Dedica Deluxe’s slim design is ideal for small kitchens.
    • Automation vs. Control: If you prefer automated features, the Mr. Coffee One-Touch CoffeeHouse+ offers convenience, while the De’Longhi Stilosa provides more hands-on control.
    • Additional Equipment: Machines like the Breville Bambino Plus and Bambino lack built-in grinders, so you’ll need to invest in a quality grinder for optimal results.
